Kurkuri Bhindi - • Very crispy and crunchy ladyfinger hotel ... *********************** BHINDI BUTTER MASALA Preparation time 5-10 minutes Cooking time 20-25 minutes Serve 2-4 Ingredients For Bhindi Butter Masala 1 tbsp Oil, तेल 2-3 tbsp Butter, cubed, butter Prepared Ginger Garlic paste, Ginger Garlic paste 1 large Onions, chopped, Onion 2 no. Bay leaf, bay leaf 2 tsp Turmeric powder, turmeric powder 1 tbsp Degi red chili powder, degi red chili powder 2 tsp Coriander powder, coriander powder 2-3 tbsp Curd, beaten, curd ½ cup fresh Tomato puree, fresh tomato puree Salt to taste 2-3 tbsp Butter, cubed, butter 1 tbsp Tender Coriander stems, finely chopped, coriander stalks ½ cup Water ¼ cup Fresh cream, optional, fresh cream Sauteed Lady finger, Sauteed Bhindi 2 tbsp Coriander leaves, chopped, coriander leaves 2 tbsp Butter, cubed, butter ½ tsp Dry fenugreek leaves, crushed, kasuri methi For Sauteing Bhindi 2-3 tbsp Mustard oil, mustard ka oil 1 tsp Cumin seeds, jeera 2 medium Onions, sliced, onions 1 kg Lady finger (trim the head & tale) bhindi Salt to taste, salt to taste ½ tsp Turmeric powder, turmeric powder 1 tsp Degi red chili powder, Degi red chili powder 2-3 medium Tomatoes, diced, Tomato For Ginger Garlic Paste 2-3 no. Green chillies (less spicy & broken) Green chillies 5-6 no. Garlic cloves, Garlic 1 ½ inch Ginger (peeled & roughly chopped) Ginger For Garnish Coriander sprig, Coriander leaves Butter, cubed, Butter Ginger, Juliennened, Ginger Process For Bhindi Butter Masala In a kadai, add oil, butter, once it's hot, add prepared ginger garlic paste and saute it for a minute. Add onions, bay leaf and saute it until golden in color. Add turmeric powder, degi red chili powder, coriander powder and cook it for a minute. Add curd and mix it well, add tomato puree, salt to taste and saute it well until cooked well. Add butter, tender coriander stems and cook it well. Add water, fresh cream and cook for 3-4 minutes until thickens. Add sauteed bhindi, coriander leaves, and cook it well. Finish it with butter, dry fenugreek leaves and mix it well. Transfer it to a serving dish, garnish it with coriander sprig, butter and ginger juliennes. Serve hot with roti. For Sauteing Bhindi In a pan, add mustard oil, once it's smoky hot, add cumin seeds and let it splutter. Add onion, bhindi, salt to taste, turmeric powder, degi red chili powder and cook it for 5-6 minutes until golden in color on low flames. Add tomato and mix it well. Keep it aside for further use. For Ginger Garlic Paste In a mortar pestle, add green chilies, garlic cloves, ginger and grind it coarsely.
