Cut the vegetables into large cubes. Halve the onion and roast in a pan until dark. Put all the ingredients in a saucepan with the ox breast, herbs and spices. Top up with cold water. Bring everything to the boil slowly and simmer on half heat for approx. 1 - 1.5 hours. DO NOT skim off the foam. Only do this at the end. This binds the cloudy particles. Finally, carefully skim off the soup and pass it through a strainer if necessary. Remove the meat and serve as a main course. Scrape the marrow from the marrow bones and serve with the soup on toasted bread.
