This braised dish is perfection and has everything you could wish for. And that brings you the recipe for this French classic. You can actually serve Beef Bourguignon for any occasion and at any time of year. You'll make everyone happy with this soul food. Recipe: 1000 g beef shoulder 250 g carrot 250 g onion ½ leek 250 g celery 5 mushrooms 3 bay leaves 1 sprig of thyme Juniper berries, peppercorns 1 bottle of red wine (Burgundy) 750 g beef stock ½ tbsp tomato paste 1 tbsp flour 1 tbsp butter Garnish 150 g bacon 250 g small carrots 250 g pearl onions 200 g mushrooms 1 small bunch of parsley Side dish 800 g potatoes 300 g cream 5 tbsp butter Salt, nutmeg Instructions Trim the meat and cut into large cubes. Wash the carrots, celery, onions and mushrooms and cut them into large pieces and put them in a bowl with the meat. Cover with red wine and marinate everything for 24 hours. Strain the meat and vegetables and put the marinade to one side. Now fry the beef and vegetables over high heat in a sufficiently large pot or roasting pan with a suitable lid. When everything is nicely browned, add the tomatoes and deglaze the pan with the red wine marinade. Finally, add the herbs and spices and top everything up with the beef stock. Braise in the oven with the lid closed at 140°C for approx. 3-4 hours. Take out the cooked meat and strain the sauce. Now reduce the sauce if necessary and thicken it to the desired consistency with a little butter and flour. We put the cooked meat back into our sauce and season again with a little freshly ground pepper. Cut the bacon into cubes and fry in a pan. Add the mushrooms and pearl onions and fry them too. Season with a little salt and pepper. Cook the carrots gently with a little water, salt and sugar and glaze with butter. Mashed potatoes Wash the potatoes well and cook them in salted water with the skin on until soft. Press them through the potato press with the skin on. In a separate pot, heat the cream with nutmeg and salt.
