Grate the peel of a scrubbed lemon. Make sure you don't get the white, because that will give your apple pie a bitter taste. Hit a pack of cold butter a few times with your rolling pin to make the butter elastic. Mix 400 grams of self-raising flour, 200 grams of caster sugar and a pinch of salt in a bowl. Add 250 grams of butter and cut the butter into it with two knives until it forms a crumbly dough. Add the egg white and the lemon zest and quickly knead it into a dough ball. Wrap the ball in cling film and leave it to rest in the refrigerator for an hour. Roll out the pie dough Grease a 24 cm springform pan with butter. Take two-thirds of the dough and put the rest back in the refrigerator. Dust the work surface, the rolling pin and the dough with some baking flour. Roll out the dough with the rolling pin into a sheet of about 1 cm thick. Cut out a circle with the ring of the springform pan and place it on the bottom of the greased pan. Line the edge of the springform pan with the rest of the rolled out dough. Peel and cut the apples Preheat the oven to 175 °C. Peel six tart apples, such as golden delicious apples. Cut the apples into quarters and remove the core. Sprinkle the apples with two tablespoons of cinnamon and 50 grams of white caster sugar. Beat the egg yolk and mix half of it with 150 grams of almond paste. Spread this over the pastry base. Place the apples on top. Sprinkle the work surface and the rest of the pastry with some baking flour. Roll out the pastry into a long sheet of about 24 cm. Cut about eight strips of 2 cm wide and place them in a diamond pattern on the filling. Brush the apple pie with the rest of the egg yolk. Baking the apple pie Bake the apple pie for about 1 hour, slightly below the middle of the oven, until golden brown and done. Remove from the oven and brush the pie with two tablespoons of apricot jam. Let the apple pie cool in the tin. Grate the yellow peel of half a lemon and squeeze the fruit. Mix in the zest, two tablespoons of juice, 50 grams of caster sugar and 150 grams of blueberries. Spread the mixture over the pastry base and sprinkle the raspberries over it. For the top layer, crumble the remaining dough and two tablespoons of flour, 30 grams of oatmeal flakes, 50 grams of cane sugar and the reserved egg yolk. Spread the crumbs over the fruit. Bake the apple pie for about 1 hour, slightly below the middle of the oven, until golden brown and done. For the last 10 minutes, turn the oven to bottom heat and let the pie cool in the pan.
