Gluten-free bread is usually very expensive and not always particularly tasty. This one is! You can choose the spices according to your taste. It is best to make the dough in the evening; it should rise for 6-8 hours. Pour all the dry ingredients together and add the spices. Dissolve the maple syrup in the water, slowly add it to the rest in the bowl and knead. Add the oil and knead again. Line the baking pan with baking paper and line the dough, pressing it to the edges. Then cover with a tea towel and leave to stand overnight. The next day, preheat the oven to 180 degrees circulating air, spray the bread with water, then sprinkle with sunflower seeds and/or pumpkin seeds.
