After we went to the field to extract the escamoles with our friend Toño Briones, a mezcal producer in La Pendencia Pinos Zacatecas, we visited the mezcal factory and tasted the delicious mezcal they produce there. We tried everything from the lowest, about 38 degrees, to the highest, about 68-70 degrees, a true delight that inevitably makes you happy, an excellent way to socialize, but you must drink it responsibly, otherwise the party could end before its time.
