Ingredients Recipe 600 g (3 medium) apples 250 g wholemeal flour 50 g potato starch 150 g + 20 g brown sugar 200 ml water 60 ml + 10 ml corn oil Juice and zest of one untreated lemon 1 sachet of baking powder 1 pinch of salt Preparation Water Apple Cake 1. In a bowl, combine the wholemeal flour, potato starch, brown sugar and a pinch of salt. Flavour with plenty of grated lemon zest. 2. In the centre, combine the water and corn oil together with the juice of half a lemon. The right alternatives As an alternative to wholemeal flour, you can use simple white flour 00, while the potato starch can be replaced with any other starch (e.g. cornstarch or rice flour). The lemon zest can be accompanied by a teaspoon of pure vanilla essence or a pinch of cinnamon powder. 3. Preheat the oven to 160°C (fan assisted). 4. Before adding the yeast to the dough, prepare the apples. Wash the apples, peel them, cut them into quarters and remove the core. Cut the apples into thin, even slices. Sprinkle the apple slices with the juice of half a lemon to prevent premature oxidation. 5. Cut the apples, add a sachet of yeast to the prepared batter. 6. Pour half the dough onto the base of a springform pan (with a diameter of 24 cm), lined with baking paper. Arrange the apple slices in a fan shape, neatly. Cover with the remaining dough, level and create another crown of apples. Brush the surface of the apples with a spoonful of seed oil and sprinkle with brown sugar. Did you know that… To speed up the process, you can dice the apples and mix them into the dough. The apples can be replaced with other fruits, such as pears and grapes! 7. Bake the cake immediately at 160°C (fan assisted) for 45 minutes or until golden brown. 8. Remove from the oven, let cool, cut into slices and serve.
