Ingredients: 1.5 kg large anchovies, 4 boiled potatoes, 5 vine tomatoes, basil, 50 g Sardinian pecorino cheese, 5 courgettes, 1 shallot, 1 potato, 1 knob of butter, vegetable stock, extra virgin olive oil, salt and pepper. Method: Peel the tomatoes: cut them, blanch them, then peel them, remove the seeds and cut them into small cubes. Season the tomato with oil and salt. Grease a baking dish with plenty of oil, then arrange the anchovy fillets at the base and on the edges. Place a layer of sliced boiled potatoes on top, a little diced raw tomato, fresh basil and cover with more anchovy fillets. Fold the anchovies inwards on the edges and spread more tomato, grated pecorino, salt, pepper, oil on the surface and put in a hot oven at 180° for 10 minutes. For the zucchini cream, in a pan, fry the chopped shallot with a knob of butter. Add the chopped zucchini and cover with the vegetable broth. Add the boiled potato in pieces and finish cooking the zucchini. Blend with an immersion blender. Filter with a strainer.
