In the programme series 'Amsterdam Icons' we welcome a special Amsterdammer to talk to about their work, life and connection with Amsterdam. This time it is the famous Amsterdam pastry chef Cees Holtkamp, who opened Patisserie Holtkamp on the Vijzelgracht together with his wife Petra Holtkamp in 1969. This pastry shop quickly became a household name in Amsterdam. 'Grandpa Cees' became known for his characteristic croquettes and tarts such as lemon meringue and cheesecake. His daughter Angela took over the shop more than 20 years ago, but this did not mean that Cees stopped baking and perfecting. He wrote several recipe books, the last two of which were in collaboration with artists Klaas Gubbels and Kamagurka. Together with his granddaughter Stella, he turns every home baker into a master baker with his instructional videos on FoodTube. In addition to his love of baking, Cees has also been fascinated by architecture from an early age. This interest in architecture is reflected in the fact that Petra and he left the store completely in its original Art Deco style, against all advice. Where does Cees get his motivation to keep perfecting it? And how has he, who has been looking out over the Vijzelgracht for over 50 years, seen Amsterdam change?
