Written Recipe - Aloo Palak Prep time: 20-25 minutes Cooking time: 20-25 minutes Serves: 4-5 people Ingredients: SPINACH Spinach 1 LARGE BUNCH MUSTARD OIL Mustard oil 3 TBSP POTATO Potato 3 MEDIUM (DICED) RED CHILLI Red chilli 1 NO. ASAFOETIDA Asafoetida 1/4 TSP CUMIN SEEDS Cumin 1/2 TSP ONION Onion 2 MEDIUM (CHOPPED) GARLIC Garlic 1 TBSP (CHOPPED) GINGER Ginger 1 TSP (CHOPPED) GREEN CHILLI Green chilli 2 NOS. (CHOPPED) POWDERED SPICES TURMERIC POWDER Turmeric powder 1/4 TSP KASHMIRI RED CHILLI POWDER Kashmiri red chilli powder 2 TSP CORIANDER POWDER Coriander Powder 1 TBSP CUMIN POWDER Cumin Powder 1/4 TSP DRY MANGO POWDER Mango powder 1/2 TSP HOT WATER HOT WATER A SPLASH TOMATO Tomato 2 NOS. (CHOPPED) SALT SALT TO TASTE SUGAR SUGAR A PINCH HOT WATER HOT WATER AS REQUIRED LEMON JUICE Lemon juice 1 TSP GARAM MASALA GARAM MASALA A PINCH FRESH CORIANDER Green Coriander A HANDFUL (CHOPPED) Method: Wash the spinach leaves & pat them dry using a clean kitchen towel or tissue, then chop it & transfer it into a bowl. Set a kadhai over high flame, add oil & let it get hot until it starts smoking then lower the flame & let it cool down slightly. Add the diced potato & fry them over medium high flame until they get 90% cooked, make sure you keep stirring them frequently, to check insert a toothpick, it should pierce the potato easily, then transfer the potatoes into a bowl. In the same oil add red chilli, asfoetida, cumin seeds, onion & cook until the onions turn light golden brown. Next, add garlic, ginger & green chilli & cook until the onions turn completely golden brown. Lower the flame & add all the powdered spices along with a splash of hot water, stir well & then cook over high flame until the oil separates. Then add tomato, salt & sugar, stir & cook over high flame until the tomatoes get cooked & the oil separates. Once the tomatoes get cooked, add the chopped spinach over the masala & cover the kadhai without stirring & cook over low flame for 3-4 minutes or until the spinach releases its moisture. Then take the lid off, stir & cook until all the moisture evaporates, then add hot water to adjust the consistency & to cook the spinach further slightly. Then add the fried potatoes along with lemon juice, stir & taste to adjust seasoning if required.
