It is a tradition with us to make sausage rolls for Christmas and eat them on rye bread with a good mustard just before going to bed on Christmas Eve. Here you get my sausage roll recipe, which is nitrite-free, and you don't need a sausage roll press to get started. It is easy to make and delicious to eat! Do you have any special Christmas traditions in your family? What you need: - Pork neck of 1.5 - 2 kilos - 4 tablespoons of salt Filling: - 1/2 tablespoon of allspice - 1 tablespoon of black pepper - 2 tablespoons of onion powder - 4 leaves of husblas How to do it: 1. Cut the pork neck into 1 - 1.5 cm and salt the meat thoroughly all over. 2. Roll the meat together and let the salt soak for 15 minutes. 3. Soak the cottage cheese in cold water. 4. Grind the spices coarsely or finely as desired. 5. Roll out the meat and sprinkle the spices on the inside in a thin layer. 6. Place the soft husblas leaves on the meat and roll the sausage roll tightly together. 7. Tie the sausage roll and poach it in the cooking layer for 50 minutes at 95-98 degrees. 8. Turn off the pan and let the sausage roll finish drying in the pan for 1 hour before taking it out and putting it in the fridge. 9. The sausage roll must be refrigerated, preferably overnight or for a minimum of 6 hours. 10. Enjoy your sausage roll with whatever you like. Cooking stock: - 3 liters of water - 2 tablespoons of salt - 2 carrots - 2 parsnips - 1 onion - 6 bay leaves - 3 sprigs of fresh thyme - 1 tablespoon of black peppercorns How to do it: 1. Bring water and salt to a boil. 2. Add the other ingredients and let it all boil together for 15-20 minutes.
