Abass' goal "is precisely to modernize communication and attract people to this often undervalued manual profession". With his Instagram and TikTok accounts, he presents cooking tips, promotes rarely consumed cuts like calf's heart or presents those that can fill the plate at a low price. "We have to adapt to the population and new consumption patterns," he explains, reacting to the contemptuous remarks under his video revealing a platter of halal charcuterie. "There's something for everyone, the important thing is that his products are quality," asserts Ghada, a new customer attracted by the sirloin steak and poultry ham in the window. "I know him, he's passionate about animals and French agriculture, and it shows in his meat," explains Loan, a regular, who arrived at the shop to order a Black Angus entrecôte and share with his butcher a video of a Normandy cow captured on the road during his last vacation.
