Workers sort the surimi by grade and stack them. The hard frozen surimi is quite heavy, so moving it is tiring. The prepared fish cakes are thawed and kneaded with various ingredients to suit the diverse tastes of consumers. The factory, which produces 60 tons of fish cakes a day, operates nonstop as if 24 hours are not enough. Workers also busily keep up with the production line that is fully operational. Although most of the production lines have been replaced by machines, there are still fish cakes that require manual labor. The handmade fish cakes made with the skillful hands of workers with 20 years of experience boast a unique chewy texture.
