In this conversation, I asked the great Latvian chef Mārtiņš Rītiņš about his mastery, which applies to both the restaurant and the team, as well as his experience serving the most influential officials of many countries. I also asked him about the courage to be different, because Mārtiņš is a unique and vivid personality with a rarely fascinating life story, which can now be read in Linda Apse’s recently published book about him: “De Profundis – Mārtiņš Rītiņš”. Mārtiņš is the chef of the restaurant “Vincents”, an entrepreneur, a culinary TV host and a Knight of the Order of the Three Stars. I have admired his work for at least 20 years. Having read his book and talking to him about the most moving chapters in his book for me, I now admire his openness and courage even more.
