In this episode we look at a very important area of life - BREAD. For us, home comfort smells like freshly baked bread. But since we have an interest in a healthy lifestyle, we can't just pick up the first bread recipe on the internet and start baking. We had to first understand what real bread is, what makes it real, and how to make it. Often, when we want to prepare something in an authentic traditional way, we think of our grandparents. There, in the past, we often find knowledge passed down from generation to generation, and in many cases our ancestors did many things the right way. However, sometimes, as generations change, an event occurs that breaks the chain of knowledge. Such a process of forgetting can occur very quickly. Such is the case with bread. When industrial yeast appeared on the market, it only took a generation to forget how to make sourdough bread. The real, traditional, healthy bread is the one made with kvass. Maybe someone's grandmother made it with kvass, but mine was modern and used yeast. Therefore, our parents do not know how to make kvass. They had no reason to know because the yeast was a convenience and no one found a reason not to benefit from this product. Therefore, Nadia and I had no choice but to buy a few books and read and practice until we learned. Back in the day, baking was a craft, but today it's a business and no one is interested in teaching us how to make real homemade bread. In fact, we live in a corporate world where there are more people interested in nobody knowing how to make bread than there are people who want us to learn. Nadia and I have been making bread since 2020 and I can say that homemade bread is in the top 5 events that have changed my life for the better. Therefore, we would very much like to pass on the idea and be the drop in the ocean of the revival of a wonderful tradition. And it's not just about tradition, that's not even what's important in this case. More importantly, sourdough bread is healthy and yeast bread is harmful. This is very important for our nation, because Bulgarians have a very low health culture. We don't do sports and eat junk food. This, combined with our shoddy health services, makes us the sickest nation in the EU. And if we can afford compromises with some food products, we can't with bread, because we consume it most often.
